This recipe will show because the Portuguese cod is reputed to be the richest. The trick is to have some good pieces of cod, dressed with oil, white wine, and lots of onion.
Ingredients for the Baked Cod Portuguese
1 kilo of chopped fresh cod
potatoes
2 onions
1 cup olive oil
1 cup white wine
black olives
garlic
Salt and pepper
parsley

Ideally, the pieces of cod are overweight, and has been desalted well, at least 24 hours before canbi�ndole the water several times.
Cut the potatoes into thin slices and fry a little, low heat, color to catch (not much because then they will go in the oven). Floured pieces of cod, and spent two minutes in the pan, also to catch color.
We take a baking dish, we take a good splash of olive oil in the bottom, and chopped raw garlic to taste. Put over a good bed of onions (can be natural, or fried), and then place the potatoes on the sides and center, pieces of cod. Add some salt and pepper to taste. Pour a glass of white wine and is introduced in the oven, covered, about 30 minutes.
We take the source and sprinkle parsley on top, and place black olives, and ready to eat.
