Feta Tartlets

Ingredients for Feta Cheese Tartlets


butter and flour for dusting
MASS Tartlets:
100 g of normal wheat flour
1 / 4 teaspoon salt
5 1 / 2 tablespoons butter in small pieces at room temperature
1-2 tablespoons cold water
FILLING:
1 egg
3 egg yolks
300 g whipping cream
salt and pepper
115 gr feta cheese, diced
6 pitted black olives, halved
Sprinkle rosemary
Preparing Feta Cheese Tartlets
First preheat the oven to 200 � C. Grease pans with butter tarts or muffins.
1. FOR THE DOUGH: Sift flour into a bowl, add the butter cubes and work with the fingertips until a sort of crumbs or bread crumbs. Then pour the water knead the dough until blended. when the dough is well blended, form a ball and cover with plastic wrap. Keep it in the fridge 30 minutes.
2. Spread the dough with the rolling pin on a floured surface to a thickness of about 3 mm. Cut 12 circles with the edge of a glass or cookie cutter and put into molds, pierced with a fork. Cover the tarts with foil and bake 12 minutes, remove the paper and cook for 3 minutes more.
3. While the dough is baked in white put the egg yolks and cream in a bowl and beat.
4. Place the diced cheese pastries and top with cream and egg mixture, place the olive half on top and a little rosemary and bake for 15 minutes or until filling thickens.
