If you want the flavor of barbecue but do not have time to fire up the grill, this quick barbecue chicken pizza can feed your craving. The rich flavor of barbecue sauce is in every bite.
The tender chicken, onions, and melted cheese combine to make a really delicious meal. With this pizza, you can enjoy the flavor of barbecue any time of year, no matter what the weather.
You can also use leftover grilled chicken for this pizza if you have it. If not, just cook up a chicken breast, cut it into pieces, and douse it in sauce. The oven will bake the sauce onto the meat, giving it that flavor of being on the grill. When you apply the sauce to the crust, you can make a very thin coating if you wish. Extra sauce can then be served on the side for dipping. Since this recipe mixes the barbecue sauce with some marinara sauce, it cuts a little of the overwhelming sweetness. If you use just barbecue sauce, it pays to serve most of it on the side or to cut the sweetness with just a dash of white wine vinegar.
Red onions are great on this pizza, but if they are too strong for you, feel free to substitute vidalias or whatever onion you prefer. Of course, you can leave the onion off entirely if you choose. You can always add mushrooms, peppers or whatever ingredients you like best that go with barbecue sauce. You can also blend your cheeses. Mozzarella goes well with provolone, gouda or other cheeses you may have on hand.
Serve this pizza with a nice green salad to make a complete meal. Leftovers are great cold or reheated. Keep extra pizza crust on hand in the refrigerator or freezer so you can whip this recipe up whenever you want. This is easy to do if you make a double batch whenever you make the dough.
